NILGAI

South Texas Antelope

 

These animals are native to the Himalayan foothills of India and Nepal and are traditionally called “nilgai” antelope, translated as “blue bull.” The meat has a mild flavor with a good texture – much like veal. It is extremely low in fat, averaging less than 1% for most cuts.

AXIS

Spotted Deer

Axis venison is considered by many to be the finest venison in the world. A native of India, the Axis deer was introduced to ranches in the Texas Hill Country over 50 years ago. The meat is finely textured and tender.
